In addition to making all the beer, I’m responsible for inspiring my staff and my customers to think of Bison as more than a beer–we are a movement. I lead by example sharing that one need not sacrifice the pleasures of everyday living to be green and sustainable. Oh, yeah, and I pretty much run the company.
If you were a style of beer, what would you be and why?
I’d be my Belgian Dubbel, Raisin’ Cain. Like the brew, I am a revolutionary. I have a wonderful dark fruit flavor from all the anti-oxidents I consume, a warming dark malt backbone to compliments the richness of life, and I finish with a blend of bitter and sweet from the entrepreneurial journey of advocating for organics. Organic cane sugar leaves a sweet taste on my lips. I pair well with everything from a street food like a Bahn Mai sandwich with pickled slaw, to a Michelin Chef’s Grilled Pork Belly with Cauliflower and Peach remoulade.
What is your favorite Bison beer to swill down?
My IPA is, to me, perfect. It’s not too bitter, but I can taste the pungent tangerine from the organic hop farmer’s work, the fruity esters from yeast, augmenting the citrus of the organic hops, and the sweetness of the finest organic malts. I make the IPA so I can enjoy two or three and still be a social animal.
What is you favorite beer and food pairing?
Chocolate Stout, roasted onions and potatoes, and a pan seared Free Range Rib Eye Steak….my dry roasty brew has a rich chocolate character, and a silky and smokey aroma is accentuated when paired with grilled meats and veggies.
What does organic craft beer mean to you?
Craft beer is rarely alone. Organic food and beverage is the nexus of three sustainable activities in our modern world: socializing with family & friends; knowing that the agriculture practices produced zero pollution to our rivers and streams that harm waterfowl and fisheries, and the farm workers; and celebrating the farmers and food artisans who take the care to make our lives richer with their handiwork.
And lastly, what is the best part about working for Bison Brewing?
Although the journey to grow my company the last couple years has now taken me out of my brewer’s boots everyday (my favorite vocation), it brings me in touch daily with world-class employees, distributors, retailers, consumers, and social media mavens. I look forward to my job everyday because it is different everyday.
